The Gambino fig is a seedling fig from my childhood that is located near an irrigation canal and entry way to an Italian friends home. The fig is green with a light yellow color when fully ripe. When allowed to get to the premium ripeness the fig imparts a very beautiful gem like burnt orange color to the inner flesh. There is a very smooth and silky experience noticed right off. There lower portion of the fig has a portion of the flesh where its concentrating this silk and it really makes for a unique taste experience. The flavors are of maple syrup and bananas. If you can imagine waffles with real maple syrup and chopped banana on top, you are close to recreating this flavor experience. The skin is velvety thin on the outside but inner layer is slightly chewy with good flavor to compliment the sweet inner flesh. Eye appears open in picture but it was tight on inside. Prolific Main crop , mid August in zone 9b. Small Breba crop.
